Did you try out that delicious Turmeric Mango Smoothie from the last post? Well if you liked it I have good news for you – it also transforms itself into the best ever popsicles! All you need to do is make up the smoothie, resist drinking it (not easy, I know…) and instead pour it into popsicle moulds, put it in the freezer and leave it to set. In a few hours you will have yourself a turmeric mango popsicle treat that will freshen up your day and give you your daily dose of turmeric.

These popsicles are sweet but not too sweet and a much healthier alternative to any store bought varieties. I am guessing they will be a hit with any little ones you may have running around, but that you will have to try out and let me know! I copied out the full recipe below to save you jumping back to the turmeric mango smoothie post, but all the ingredients are just the same. However if you want to pimp up your popsicles a little bit I also gave some tips for how to dip them in chocolate and roasted coconut for a little indulgence. Yum. PS This trick works for almost any of your favourite smoothies, and it is a great way to get some fruit and vegetables into the hands of fussy kids (or adults)!

Turmeric Mango Popsicles

Prep time: 5 mins | Freezing time: 4 hours

Serves: 4 popsicles

Ingredients

  • 1 cup Plant Based Milk (e.g. Oat, Almond, Rice, Soy or any other variety you have)

  • 2 Dates, pitted

  • 75 mL Mango Puree*

  • 1 teaspoon Turmeric Spice Mix

  • 1 large Frozen Banana (make sure ripe before freezing)

  • 2 ice cubes

  • Optional: squeeze of lime or lemon juice

Optional topping

  • 50g Dark chocolate (choose one with high percentage cacao, low sugar)

  • 2 Tbsp Coconut Flakes

    *NOTE: Choose a mango puree that does not have any added sugar and contains only pureed mango. I can find this in the sauces section of my supermarket, but you may have to ask for it. Alternatively, you can make this yourself by blending up some very ripe mangoes. You can also simply replace the puree with ½ large mango or 1 small mango. Just make sure the mango is really ripe.

Instructions

  1. Add all smoothie ingredients to a blender (milk, dates, mango puree, turmeric spice mix, banana, ice cubes, lime juice). Blend on high speed until all ingredients are liquefied, usually 1-2 minutes depending on your blender.

  2. Pour mixture into a popsicle mold. Place the sticks in and put the whole thing in the freezer. Leave for several hours or ideally overnight until they have set.

  3. Remove and run under warm water to easily remove the popsicle from the mould. Serve.

  4. Alternatively, add a chocolate coconut topping: Just before serving, melt some dark chocolate in a heatproof bowl sitting inside a saucepan of water on low heat. At the same time, place some flakes of coconut in a non stick frying pan on a medium heat, stirring continuously until browned. When brown remove from heat and set aside. Remove the popsicles from the mold and then dip them in the melted chocolate or drizzle chocolate over them. You have to work really quickly or put the popsicles on a frozen or cold surface to slow the melting. I usually put a cold pack under the plate i sit them on. When coated in chocolate, immediately return to the freezer on a tray to allow them to set again. Remove after 15 mins, top with the roasted coconut and serve.
